Sausage Rice Cassarole

Ingredients

  • Lethal amount of shredded cheese
  • 1 lb sausage meat
  • 3 cup uncooked rice
  • 12 oz crushed Tomatoes
  • 1 1/2 cup any frozen veggie mix
  • 1 medium onion, finely chopped
  • 6 cloves garlic, minced
  • 1 cup green onion, chopped
  • 2 tsp chicken bouillon powder
  • 1 tsp rosemary
  • 1tsp thyme
  • 1 tsp basil
  • 1 tbsp soy sauce
  • salt and pepper

Instructions

  1. Wash rice and set it to cook.
  2. As rice cooks, heat a large pan over medium high heat and brown sausage meat until browned.
  3. Scoop out sausage meat and set aside. Fry onion and garlic until fragrant, then toss in frozen veggies to cook.
  4. once veggies are cooked to desired doneness, add sausage in to mix and turn off heat.
  5. Fold in the rice, tomatoes, herbs, soy sauce, and seasonings. Add water 1/4 cups at a time until mixture well moistened.
  6. Set in a casserole dish, then cover and bake at 400 degrees for 30 minutes. Then take off cover, cover with cheese, and bake for another 10-15 minutes.
